mmm mmm good

Just wanted to share a chicken enchiladas recipe that Larkin's mom (G-mama) made for his birthday a few weeks ago.  We had them again tonight and they were super yummy...definitely should give them a try if you're looking for something new!

Chicken Enchiladas
3 chicken breast
1 small can of diced green chilis (do not drain)
Olive oil (enough to saute in)
Minced garlic (a little to your liking)
1 cup shredded monterey jack cheese (can be the bag of shredded mexican blend, too)
1 block of cream cheese
1 cup heavy whipping cream
Shredded cheddar cheese (just a little)
Tortillas

Boil chicken.  In skillet saute chilis and garlic in olive oil.  Add monterey jack cheese and cream cheese.  Stir in about 1/2 cup water and add chicken. Put mixture in tortillas, roll up and put in 9 by 13 pan.   Sprinkle cheddar cheese over them and pour whipping cream over it all.  Bake at 350 for 20 or 30 minutes.  Makes 5 or 6 if you use the big tortillas.
